Easy and flavorful Iced Lemon Pound Cake to rival your Starbucks craving.
Ingredients
  • ½ cup unsalted butter, melted
  • ¾ cup organic raw sugar
  • 2 eggs
  • 2-3 tbsp fresh squeezed lemon juice
  • 1 tsp lemon zest
  • ¼ tsp salt
  • 1½ cups flour
  • 1 tsp baking powder
  • ½ cup buttermilk
  • ¾ tsp real vanilla extract
Instructions
  1. Preheat oven to 325.
  2. In a mixer, combine melted butter and sugar until well incorporated.
  3. Add salt, flour, , lemon zest and baking powder and continue mixing until incorporated.
  4. Add eggs, buttermilk, and vanilla.
  5. Pour mixture into a well-greased loaf pan and bake for 1 hour (or until top is golden brown).
  6. Carefully remove from pan and set aside to cool before adding icing.
Notes
Don't be shy with the lemon! A little more lemon juice and a little more lemon zest is never a bad thing.
