Lemon Pound Cake

Serves: 1 loaf
- ½ cup unsalted butter, melted
- ¾ cup organic raw sugar
- 2 eggs
- 2-3 tbsp fresh squeezed lemon juice
- 1 tsp lemon zest
- ¼ tsp salt
- 1½ cups flour
- 1 tsp baking powder
- ½ cup buttermilk
- ¾ tsp real vanilla extract
- Preheat oven to 325.
- In a mixer, combine melted butter and sugar until well incorporated.
- Add salt, flour, , lemon zest and baking powder and continue mixing until incorporated.
- Add eggs, buttermilk, and vanilla.
- Pour mixture into a well-greased loaf pan and bake for 1 hour (or until top is golden brown).
- Carefully remove from pan and set aside to cool before adding icing.
Don't be shy with the lemon! A little more lemon juice and a little more lemon zest is never a bad thing.
