Mom's Banana Bread

Stright from my mom's recipe box, this is the banana bread she made for our family.
Ingredients
  • 1¾ cup Flour
  • 2 tsp Baking powder
  • ¼ tsp Baking soda
  • ½ tsp Salt
  • ⅓ cup Shortening (or butter, or oil)
  • ⅔ cup Sugar
  • 2 whole Eggs
  • 1 cup Mashed ripe bananas
Instructions
  1. Preheat oven to 350.
  2. Add all ingredients to a large mixing bowl and whisk together until well incorporated.
  3. Spray, grease, or flour a standard bread pan.
  4. Pour mixture into the bread pan and place in the oven for 45 to 60 minutes.
  5. Start checking for doneness around the 45 minute mark. It is done when you can stab it with a toothpick and the toothpick comes out clean.
Notes
My mother admittedly never used shortening. It just wasn't something she kept in the pantry. She usually substituted vegetable oil. She also made this bread as a way to use up overripe bananas, so it was often made with more than a cup of mashed banana as there were usually two or three large, overripe bananas that needed to be used.
