Avocado Pico de Gallo

Great Pico de Gallo comes from using fresh ingredients and letting the flavors marry together. Pico de Gallo is a great light, fresh topping or garnish for Mexican and Mexican-American dishes that might be a little heavy.
Ingredients
  • ½ Red Onion diced
  • 1 jalapeno diced
  • 1 Roma Tomato diced
  • ½ cucumber chopped
  • ½ avocado chopped
  • Cilantro rough chopped
  • Fresh Lime Juice
  • 1 tsp olive oil
  • Salt
  • Pepper
Instructions
  1. Mix all in a bowl (except avocado) and stir thoroughly.
  2. Salt and Pepper to taste then add avocado and gently stir together.
  3. Set aside in refrigerator for at least 1 hour.
