Among the stack of recipes my grandmother sent me was her Peanut Butter Cookie recipe. This year when Merelyn and I decided to do something nice for our neighbors, we pulled out a handful of cookie recipes from the family recipe folder and made several batches to hand out. They turned out great and we had enough cookie dough left over to make ourselves one giant peanut butter cookie to have with homemade vanilla ice cream.
Grandma's Peanut Butter Cookies

Grandma Creech's homemade peanut butter cookies.

Ingredients
- 1 cup soft shortening
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs, beaten
- ½ cup peanut butter
- 1 tsp vanilla
- 2 cups flour
- 1 tsp baking soda
- ½ tsp salt
Instructions
- Preheat oven to 350 degrees.
- Cream sugar and shortening in mixer.
- Add eggs, peanut butter, vanilla and continue mixing.
- Sift flour, baking soda and salt and add to mixture.
- Stir until well mixed.
- Roll into 1" balls and press flat on a lightly greased cookie sheet.
- Bake in oven for 10 to 12 minutes.
- Carefully transfer cookies to a cooling rack, they will be very soft but will harden a bit as they cool.
Notes
Don't overcook these or they will end up very hard. They will be very soft when you pull them out of the oven after 10-12 minutes and you will be tempted to cook them further. Don't. It's very easy to overcook these.
